Tomatillo Ranch Dressing (Cafe Rio)

1 C. Mayo (not miracle whip)

1 C. Milk

1 pkg Hidden Valley Ranch Dressing mix

2 tomatillos

2 serano peppers (or whatever; I often use 1 jalapeno)

1/2 bunch of cilantro


Blend together in a blender till creamy.  Serve with cafe rio pork or on everything on earth.

Amy Harris Alfredo Sauce

Melt 1 C. Butter, then add 2 C. Heavy cream.  Add some minced garlic and salt and pepper.  Add in 3/4-1 C.  Parmesan cheese.  Let simmer 8 minutes.

Sweet and Sour Meatballs

The Best Sweet and Sour Meatballs Recipe

1 C. brown sugar
3 Tbsp flour
1 1/2 C. water
1/4 C. white vinegar
3 Tbsp. soy sauce


  1. In a large saucepan, combine the brown sugar, flour, water, white vinegar and soy sauce. Mix thoroughly. Add meatballs and bring to a boil. Reduce heat and simmer, stirring often, for 30 minutes.
Can also add some canned crushed pineapple with juice (combining with water to equal 1 1/2 C.) and cut brown sugar in half.

Throw in crockpot with frozen meatballs for an hour.  Serve over rice.  

Can also drop meatballs in sauce and cook on stove for 20-30 mins till heated though.

Jen's Homemade Marinara Sauce

Butter
1 1/2 C. chopped onion
3-4 cloves garlic

Saute in sauce pan in plenty of butter.  :)  Remove from heat and let cool a little to prevent splattering.
Add:
1 qt. frozen tomatoes/sauce or jar of tomatoes (blended a bit) or 28 oz jar of crushed tomatoes or probably        a big can of tomato sauce.
Bring to a rapid boil; then add:
1 tsp. salt
1 tsp. pepper
1 tsp basil
1 tsp fennel seed
1 tsp Italian seasonings
Tiny dash crushed red pepper flakes
1 can tomato paste to thicken
Browned meat if you'd like
Adding peppers, onions, & mushrooms (chopped or like Jake did it) also delish-o!

Reduce heat and simmer 15 mins to several hours (or all day in crock pot)

NOTE:  This is combination of several recipes and my own additions (hello fennel!)
