Raspberry Jello Salad

6 oz package Raspberry Jell-O
2 cups boiling water
2 cups salted pretzel sticks (before crushing)
1/4 cup granulated sugar
1 stick (8 Tbsp) butter
1 (8oz) package cream cheese – softened
1 (8oz) package Cool Whip – thawed in the refrigerator
3/4 cup granulated sugar
12 oz bag frozen raspberries – thawed in refrigerator



Pre-heat oven to 350°F.
1. Combine 6 Oz packet of Jell-O with 2 cups of boiling water and set aside to cool to room temperature.




 2. Crush 2 cups of pretzels in a ziploc bag, using a rolling pin.

3. Melt 1 stick of  butter than add 1/4 cup sugar in saucepan. Add pretzels and mix together.



4. Lightly press pretzel mix into a 13×9 -inch pyrex dish and bake for 10 minutes at 350°F, then cool to room temperature.

 5. While pretzel mix is cooling down, beat 8 oz of cream cheese and 3/4 cup sugar on medium/low speed in the bowl of your mixer with paddle attachment until well-combined.


 6. Next, stir in Cool Whip using a spatula and mix until well combined.


 7. Spread mixture over cooled pretzels and go all the way to the edges of the dish to create a seal. You don’t want the jello to leak into the pretzels. Refrigerate 30 minutes.

 8. Place  raspberries evenly on top of the cream filling and pour Jell-O over raspberries and refrigerate until jello is set.

Karen's Best Pasta Salad

1 lb pasta (whatever you like)

cherry tomatoes

Red onio 

sweet peppers

cucumber

Olive Garden salad dressing


Cook pasta and cool.  Add veggies (and any others that sound good).  Top with dressing.  YUM and easy.

Chicken Caesar Salad

Romaine lettuce
Chicken cooked with lemon pepper
Tomatoes
Red onion
Croutons
Parmesan cheese
Caesar dressing

Mix lettuce, tomatoes, and red onion.  Top with chicken, Parmesan cheese, and croutons.

Dig in.

This recipe with the lemon pepper chicken is a recipe we got from Grandpa Gary and it's a hit with the whole family.

Rustic Spinach Salad

Rustic Spinach Salad recipe

what you need

8
cups  baby spinach leaves
2
small  apples, thinly sliced, cut in half
2
cups  chopped cooked chicken breasts
1/2
cup  KRAFT 2% Milk Shredded Mozzarella Cheese
1/4
cup  PLANTERS Lightly Salted NUT•rition Heart Healthy Mix
1/2
cup  KRAFT Lite House Italian Dressing

make it

TOSS all ingredients in large bowl just before serving.

Hearty enough for a main dish on a hot day!

Spinach and cranberry salad

Jamie's Cranberry Spinach Salad Recipe

1 c. slivered almonds
1 T. butter
1 lb. spinach
1 c. craisins

Brown almonds in butter.  Toss ingredients together.

Dressing:
2 T. sesame seeds, toasted. Carefully.
1 T. poppy seeds
1/2 c. sugar
2 t. minced onion
1/4 t. paprika
1/4 c. white wine vinegar
1/4 c. apple cider vinegar
1/2 c. oil
Mix together.  Refrigerate.

*Don't put dressing on salad until serving.
